What we had for supper

So, what do you make for supper when you are trying to stretch your food dollar?

We literally had 5 cups of flour, 2 eggs, lots and lots of sausages, canned tomatoes and not much else. It was such a good meal.

First I made homemade past. If you have never made your own or tried it, you need to. It is such an amazing difference, I will have a hard time buying dry stuff again.

It is also really easy. 2 cups of flour, a big pinch of salt, 2 eggs and a bit of water to help make it doughy (a little at a time). Mix it all up and roll it out thin. Ffold the rolled piece in half and in half with flour in between and slice it thinly.

Then you just boil it in water with a bit of oil. Voila!! You have spaghetti.

For the sauce I just fried up a whack of sausage, dumped in some onions, a can of diced tomatoes, and a can of spaghetti sauce. Let it simmer some, put some spices in it and you have a lovely sauce.

It was actually very good. It fed 7 people 2 adults, a teen boy, ane 2 preteen kids, a preschooler and a baby. There is TONS of the sauce left, and I think I can turn that into a soup of some kind.

I love cooking like this. We also made potato chips for a snack while watching the hockey game. Just peel the potatoes, slice them thinly, coat them in a vinaigrette salad dressing and put them on greased cookie sheets. After about 10 mins on 250 take them out and mix them around. Put them back in for a bit longer and they are done too. When you take them out, put on whatever spices you like. We did just salt and pepper. Who needs to spend a fortune on a bag when you can take 10 potatoes and everyone gets some!!

I am becoming very creative in the kitchen, it is about time. We will be saving so much more money in the long run.

On another note, we called UI today and they said that we are going to get the check due to us for the month of February, but that someone had put a stop on our claim. They said that Mr. B.D. had started a full time job.

We marched right into the office downtown and told them what was going on and that we couldn't wait any longer. They sent us upstairs and explained what had happened. When filling out some of the paper work, we had checked off the box that said we were not looking for more work, since he was trying to get full time at his company. They automatically stopped the claim. How stupid. After many tears on my part and explaining what we had thought wheen we filled out the forms, they came to understand that it was something that they had not looked into far enough and that we would get all the backpay sometime next week!! THANK GOODNESS IT IS DONE!!!

I have been so stressed out and tired about the whole situation, but have learned a lot about waiting. (even though I usually am pretty patient) It is just that it was so long, since the beginning of January so it stretched out a while. I will be thankful to get the money and catch up on our bills.
